| Description | Anti-L-Asparaginase antibody recognizes the protein asparaginase. Asparaginase is responsible for the catalysis of aspargine to L-aspartic acid and ammonia. In food processing, asaparaginase is used to prevent the formation of acrylamide, a carcinogen, from the heating of asparagine which causes it to undergo the maillard reaction. Asparaginase is also used in cancer therapy since leukemic cells are unable to produce their own asparagine and therefore, must rely on circulating asparagine. Treatment with asparaginase converts the asparagine to aspartic acid denying the leukemic cells of asparagine, resulting in their death. Anti-L-Asparaginase antibody is suitable to investigators interested in cancer, metabolism, and enzymology.
